石美人外觀上最讓人印象深刻的當屬其前後兩段式不同的體色表現，而這種表現會隨著魚隻的成熟度增加而更為明顯。其頭部與身體的前半部體色以藍灰色至橄欖綠為主，搭配鱗片上閃礫的深藍色金屬光澤；身體的後半部與後背鰭、臀鰭與尾鰭的顏色則為鮮豔的橘紅或橘黃色，偶爾轉身時的角度又閃耀著略帶黃綠色的金屬光澤；而在這兩個區域的交匯處，若隱若現地會出現一至三條深淺色交錯的橫紋。隨著魚隻的成熟度，頭部與身體前半部的顏色會轉成帶有藍色的深灰色，而後半部則會轉成更為飽合的鮮橘紅色。
